Gluten Free Vegan Peanut Butter Cookies

The general consensus among the marketing staff here, and the birthday girl in particular is “Tasty”. I’ve made notes below for where I might change things in the future. The base recipe came from Recipe Zaar.

1 tablespoon flax seeds, ground
3 tablespoons water
1 cup crunchy peanut butter (use unsalted, I didn’t have any on hand and I think the cookies suffered for it)
1/2 banana, mashed
1/4 cup brown sugar, packed (I might add more brown sugar next time, or perhaps honey in addition to this amount)
1 teaspoon baking soda

Preheat oven to 350. Microwave flax seed and water for 30 seconds until you get gel like consistency. Mix balance of ingredients together. Drop teaspoonfuls onto an ungreased cookie sheet. Bake for 9-10 minutes.
