Sugar Cookies and Mint Buttercream Frosting

You can tell this is a recipe I’ve made a lot, as the notes in my cooking notebook are basically just a list of ingredients with the words “cream”, “add”, or “sift” next to them.

Sugar Cookies

2 C flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C butter
1 1/4 C sugar
1 tsp vanilla
2 eggs

Sift together flour, baking powder and salt. Set aside. Cream butter and then add sugar. Stir in vanilla. Add eggs. Slowly add in dry mixture. Chill dough in fridge for 1 hour. Roll on floured surface to 1/8 in to between 1/4 in. Cut with cookie cutter. Space 2 inches apart on lightly greased cookie sheet. Bake at 400° for 6 minutes.

Mint Buttercream Frosting

1 1/3 C powdered sugar
1/2 C butter
1/8 tsp salt
1 tsp mint extract (when not making mint, I add vanilla here)
4 T milk

Cream together sugar, butter and salt. Add mint extract and half of milk. Slowly add remaining milk until desired consistency.
