Corn Muffins

What I am making for tomorrow’s potluck.

3/4 C unsalted butter
1/3 C sugar
4 eggs
1/2 C milk
2 fresh jalapenos, minced
3/4 C grated Cheddar
3 oz cream cheese or mild goat cheese
1 C flour
1 C cornmeal (blue is more fun, but yellow or white are just fine)
2 1/2 tsp baking powder
1 tsp salt
2 T poppy seeds

Preheat the oven to 375 degrees F.

Grease the muffin tins. Cream together the butter and sugar. Add the eggs, milk, jalapenos, and cheeses. Mix together the flour, cornmeal, baking powder, and salt. Add the dry mixture into the batter about 1/3 at a time. Stir in the poppy seeds at the end.

Spoon the batter into the muffin tins. Bake for 22 to 25 minutes, or until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.
