I discovered today when going for my regular lunchtime apple, that some of the apples are starting too look less than tasty. Large portions of them are still edible though, so I think tonight they become Apple Spice Cake.
2 c flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp salt
1 c butter, softened
2 c white sugar
1 tsp baking soda
1 T warm water
1 tsp vanilla extract
3 apples – peeled, cored and chopped
1/2 c raisins (the basic recipe for this wants them to be soaked in water, I’ve also soaked them in wine, rum, brandy etc. depending on my mood for longer than the 10 minutes required)
Preheat oven to 350 degrees F (175 degrees C). Butter a 10 inch tube pan. Cover raisins with warm water, let soak for 10 minutes and then drain. Whisk together flour, spices, and salt. Set aside. Cream together butter or margarine and sugar. Mix in eggs and vanilla. Stir together soda and 1 tablespoon warm water, and mix into the sugar mixture. Stir in flour mixture, apples, and strained raisins until well blended. Pour batter into prepared pan. Bake for approximately 1 hour, or until a tester comes out clean. Cool in pan. Once cool, shake pan to loosen cake.
This is fine on its own, you can also dust it with powdered sugar, or you could make some kind of rum sauce for it, as I love this cake served warm.
