Cranberry Nut Bars and Peanut Brittle

And the holiday baking begins, the two family recipes… I just use the fudge recipe on the jar of marshmallow fluff. 😉 Last year I conceived of an ambitious plan to mail cookies out across the globe to various people. Because of lack of planning that never happened. I suck. This year I make no promises. Some of you might see cookies from me, some of you may not. 😉

Cranberry Nut Spice Bars
1 C butter
2 C sugar
3 eggs
1 tsp soda
2 tsp water
8-12 oz dried cranberries
3 C sifted flour
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp cloves
dash salt
1 C walnuts, chopped
2 T sugar

Mix. Chill. Shape into two rolls and place on baking sheets. Flatten with a finger to 1/4 inch. Sprinkle with sugar. Bake at 350° for 15 to 18 minutes. When cool cut into bars. Makes 4 to 5 dozen.

Uncle Harold’s Peanut Brittle
2 C roasted spanish peanuts
1 C light corn syrup
1 C water
3 C sugar
1 tsp vanilla
1 tsp soda baking
1 T butter

Pour corn syrup, water and sugar into large skillet. Cook on medium—stirring often (use wooden spoon). Grease cookie sheet. Heat syrup mixture to hard crack (300°). Add nuts and butter stir until mixed. Then add vanilla and soda. (It will foam up). Pour onto cookie sheet and pull it out thin as it cools. When cold, break into pieces with knife handle.
